A one pan lamb roast wonder.


Ingredients (serves 4)

  • 1.5 kg Leg of lamb
  • 4 Potatoes
  • 4 Sweet potato, sliced
  • 4 Small onions
  • 4 Sprigs of rosemary
  • 6 cloves Garlic
  • Mint sauce

Method

  1. Preheat oven to 160. Cut little slithers in the lamb fat only - don't cut into meat. Stuff 1/2 Clove Garlic and a Rosemary sprig. Do this all over the lamb.
  2. Cook for 3 hours - slow cooking. Baste every now and then with the juices in the pan.
  3. In the last 1/2 hr of cooking throw your vegetables around the lamb. Serve with a mint sauce of your choice.

  • I don’t know why but I only like lamb cutlets and chops. For some reason and must be the “lamb ” smell, I cant handle the other pieces , yet everyone loves any lamb . I have heard some people say the same thing, just what a shame cutlets are the most expensive part of the meat . Nice roast though .
