A one pan lamb roast wonder.
Ingredients (serves 4)
- 1.5 kg Leg of lamb
- 4 Potatoes
- 4 Sweet potato, sliced
- 4 Small onions
- 4 Sprigs of rosemary
- 6 cloves Garlic
- Mint sauce
Method
- Preheat oven to 160. Cut little slithers in the lamb fat only - don't cut into meat. Stuff 1/2 Clove Garlic and a Rosemary sprig. Do this all over the lamb.
- Cook for 3 hours - slow cooking. Baste every now and then with the juices in the pan.
- In the last 1/2 hr of cooking throw your vegetables around the lamb. Serve with a mint sauce of your choice.
