Easy, tasty and nutricious


Ingredients (serves 4 | makes 12 patties)

  • 500gms Sweet potato pre cooked and mashed
  • 4 spring onions
  • 1 clove garlic
  • 1 egg
  • 1 cup bread crumbs
  • 2 tbs flour
  • 2 tbs sesame seeds
  • 425gms tuna

Method

  1. mix all ingredients except flour and sesame seeds together,
  2. form into 12 even sized patties
  3. roll in flour and sesame seeds mixed together then fry for 2-3 mins on each side in a lightly greased frying pan. Serve with salad and wedges

  • I love that you’ve used sweet potato in this recipe, it’s a great way to sneak veg into dinner but I really like how sweet potato complements a lot of other cooking ingredients.
