This is an easy make cake, the kids love to help and it turns out well regardless of the mess!
Ingredients (serves 6)
- 600g ricotta cheese
- 1/2 Cup Vanilla yogurt
- 3 Eggs
- 1/4 Cup Caster Sugar
- 2 Tsp Vanilla essence
- 1/2 Cup Icing Sugar
- 2 tsp Lime Juice
Method
- combine ricotta, yogurt, eggs, sugar and vanilla In a food processor, until smooth and creamy. Pour into a lined 23-24cm spring form pan.
- Bake at 150°C for 30 minutes or until firm, turn off oven and allow cake to cool in the oven for 1 hour, stand at room temperature for 1/2 hour and then refrigerate until cold
- Mix lime juice and icing sugar until smooth and spread thinly on top of cold cake
Notes
You can top with a variety of flavours too, passionfruit icing is also nice
