Ingredients (serves 6)

  • 3-4 mangoes, sliced
  • 1 cup coconut milk
  • 2 eggs
  • 1 tbsp honey
  • 2 tsp vanilla
  • 1½ cups self-raising flour

Method

  1. In a bowl, combine the milk, eggs, honey and vanilla. Add the flour and mix to form a smooth batter.
  2. Cook pancakes in a non-stick pan sprayed with a little vegetable oil.
  3. Serve immediately topped with sliced juicy mangoes and passionfruit.

  • Beautiful ! However personally I wouldn’t put honey in the batter; honey is stripped of all it’s nutrial value and benefits when heated


    • You could replace the honey with pure organice maple syrup
