A quick easy never fail cake recipe.


Ingredients (serves 12)

  • 1 1/2cup self raising flour
  • 2/3cup castor sugar
  • 3 eggs
  • 1/4cup milk
  • 155g butter
  • 1tsp vanilla extract
  • FROSTING
  • 1cup cream cheese
  • 2cups icing sugar
  • 1tsp lemon juice

Method

  1. Preheat oven to 180c. Combine flour, castor sugar, eggs, milk, butter and vanilla in a bowl. Mix until creamy. Pour into prepared tin cook for 30 minutes, or golden brown. Once cooked allow to cool completely before icing.
  2. Combine cream cheese, icing sugar and lemon mix until combined. Spread over the cooled cake decorate with 100's + 1000's.

Notes

I often make these into cupcakes and decorate with lollies for birthday parties!
