Tender veal topped with tomato paste, herbs and golden cheese… does it get any better?!


Ingredients (serves 4)

  • 800g Veal
  • Plain flour for dusting
  • Butter
  • Tomato paste
  • Basil
  • Salt and pepper
  • Italian herbs
  • Mozzarella cheese

Method

  1. Dip veal in flour, shake off excess.
  2. Heat butter in a pan, and fry veal on each side until just cooked (or slightly under). Remove from pan and place into a baking paper lined baking tray
  3. Top with tomato paste, Italian herbs, salt, pepper, torn basil leaves and finally mozzarella cheese
  4. Place into a preheated (160 degree) oven for 10 minutes or until cheese is melted and golden

  • Who doesn’t love a good parmie, such a family favourite in Australia. Not sure just tomato paste is enough though. Pasta sauce or salsa instead

  • I sometimes use left over tomato sauce from pasta too and just add cheese on top!
