Just place all of the ingredients in the slow cooker and come back to a delicious, healthy soup!
Ingredients (serves 6)
- 1/2 Red onion, finely diced
- 1 Large carrot, diced
- 2 Sweet potatoes, diced
- 1 Leek, finely chopped
- 1 Parsnip, diced
- 1 Potato, diced
- 2 Sticks Celery, diced
- 1 Litre Low Salt Chicken OR Vegetable Stock
- 1 Clove Garlic, crushed
- 1 Bay leaf
- 75g Red lentils
- 1/2 tsp Dried parsley
Method
- Cut the vegetables into equal sizes.
- Add all the ingredients to the slow cooker.
- Cook on low for 8-10 hours or on high for 5-6 hours.
- Purée some of the soup or leave chunky.
Notes
*I have made this soup without onion and garlic for my dad and it still tastes fantastic. *I personally like to serve this with crusty bread.
