A base recipe that you can add to. Sometimes I add Gruyere Cheese and Bacon, other times, just veg.
The disposable containers mean I can make a few and par cook and freeze them, like I did with this one

Ingredients (serves 6 | makes 6 slices)

  • 1 packet short crust pastry
  • 8 eggs
  • 1/2 cup cream
  • veges of your choice - about 2-3 cups, I like mine really veg filled

Method

  1. Preheat oven to 180 degrees line disposable foil pie/quiche dish with pastry - going up on the sides like I have if you like it rustic looking
  2. Veges include onion, spinach, tomato, mushies, roast left over orange veg
  3. mix eggs, cream, and veges plus salt and pepper and pour into casing
  4. cook for around 45 minutes - if it still has a bit of a wobble, will be fine, as the heat within the dish will continue to cook the quiche

Notes

As there are carbs in the pastry, we serve it with brocollini, or a steamed veg of choice

  • Vege quiches are always nice. I like to make them in individual oven pots

  • Looks like a adaptable recipe, I wonder if there are any egg substitutes that would work well for the 8 eggs..
