Ingredients

  • 3 eggs
  • 1 cup sugar
  • 3/4 cup vegetable oil
  • 2 cups zucchini, grated
  • 2 1/2 cups plain flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp vanilla essence
  • 1 zest of lemon

Method

  1. Preheat oven to 180 degrees. Put patty papers in pan.
  2. Mix everything except zucchini. Fold in the zucchini.
  3. Bake 22-25 minutes.

  • Savoury muffins are amazing but i eould never have thought to try zuchinni and lemon. I’m definitely keen to give this flavour combo a go. These would make a really nice healthy lunchbox inclusion if the kids like them. Thanks so much for sharing. Can’t wait to try these out. 🙂
