Turn left over Beef Bolognese into a high protein, yummy school lunch.

Serves 2.

Ingredients:

  • 4-6 Tbsp leftover beef bolognese
  • 1 egg, beaten
  • 1/2 cup cheddar cheese, grated
  • Baby spinach, chopped (optional)

Method:

  1. Preheat a moderate oven to 180C and line 4 muffin holes with silicon patty pans.
  2. In a bowl add slightly cooled bolognese, beaten egg and spinach (if using)
  3. Divide beef mixture between the 4 patty pans.
  4. Top with cheese and bake 15 minutes or so until golden.
  5. Remove and cool slightly, keep covered in the fridge to add to school lunchboxes the next morning.
  • Very interesting recipe. I don’t usually have any leftover Bolognese, I freeze it for future easy dinners.

  • What a nice idea. I would do this for dinner for my son. Unfortunately my son’s day care don’t allow anything with eggs in them. But love the idea. Thanks for sharing.
