Ingredients (makes 400 grams pesto)
- 340gm Sundried tomato in oil
- 15 capers
- 125gm Pine nuts
- 100gm Vintage cheese (shredded)
- 4 cloves garlic
- 1 tablespoon Italian herbs mix
Method
- Put all ingredients in a food processor and blend on low speed.
- Oh wait, that's it!
Notes
Vintage cheese goes really well in this recipe but feel free to use parmesan instead if you prefer a less cheesy taste...
