Ingredients (serves 12)

  • 3 Pastry sheets
  • 2 cups Almond meal
  • 1 cup Brazil nut meal
  • 250gm Organic butter
  • 5 tablespoon Stevia
  • 2 large eggs
  • 2 teaspoon vanilla essence

Method

  1. Melt butter in microwave for 30 seconds so it becomes soft.
  2. Cream together with egg, vanilla essence, and stevia. Then mix in both nut meal. Combine until they are well mixed. You can add salt too if you like :)
  3. Spread generously on one pastry sheet and stack another sheet on top. Repeat so you get 2 layers of nut meal cream.
  4. Press the sheets together firmly and bake on 180C for 15 minutes. You can spread some more mixture on the top and sprinkle some almond flakes before baking them:)
  5. Wait until they are cooled completely before slicing them :)

  • Oooh I’m actually really keen to try this as I’m a huge fan of nut based sweets especially when its in pastry…….but I’m not overly fond of Stevia in some things so I’m curious to see how it would go in these pastries Thanks so much for sharing this recipe.

  • Nice to see a sugar free recipe, although stevia can taste somewhat bitter. I might sweeten with yacon syrup instead.
