So delicious with a coffee
Ingredients (serves 4)
- 75g butter, at room temperature
- 1 cup almond meal
- 1/4 cup icing sugar
- 2 tbs plain flour
- 1 teas vanilla essence
- 1/2 cup flaked almonds
- a 4 pack of croissants split lengthways
- Icing sugar, for dusting
Method
- Preheat oven to 180ºC or 160ºC fan-forced. Line a baking tray with baking paper. Lay croissants on prepared tray and bake for 5 mins
- Meanwhile, place butter, almond meal, icing sugar, flour and vanilla essence in a food processor. Process until a smooth paste forms.
- Open out each croissant flat. Spread 1 tablespoon of mixture over centre of each croissant. Close to sandwich together. Spread another 1 teaspoon of paste over top and sprinkle with flaked almonds. Bake for another 5-10 mins, until golden. Dust with icing sugar to serve.
