Ingredients (serves 4)

  • 75g butter, at room temperature
  • 1 cup almond meal
  • 1/4 cup icing sugar
  • 2 tbs plain flour
  • 1 teas vanilla essence
  • 1/2 cup flaked almonds
  • a 4 pack of croissants split lengthways
  • Icing sugar, for dusting

Method

  1. Preheat oven to 180ºC or 160ºC fan-forced. Line a baking tray with baking paper. Lay croissants on prepared tray and bake for 5 mins
  2. Meanwhile, place butter, almond meal, icing sugar, flour and vanilla essence in a food processor. Process until a smooth paste forms.
  3. Open out each croissant flat. Spread 1 tablespoon of mixture over centre of each croissant. Close to sandwich together. Spread another 1 teaspoon of paste over top and sprinkle with flaked almonds. Bake for another 5-10 mins, until golden. Dust with icing sugar to serve.

  • Genius. This is like the icing on the cake for a croissant. I imagine that a great croissant is difficult to make but anyone can make this almond mixture.
