Recipe: Heidi Baskerville

Ingredients

  • 1 pack Scotch Finger biscuits
  • ½ tin sweetened condensed milk
  • 100 g butter, melted
  • 1 block white chocolate (about 180–200 g)
  • M&M Speckled Eggs (for topping)

Method

  1. Prepare the base Crush the Scotch Finger biscuits into fine crumbs using a food processor or by placing them in a bag and crushing with a rolling pin.
  2. Mix the base In a bowl, combine the crushed biscuits, melted butter and condensed milk. Mix until everything is well combined and forms a sticky mixture.
  3. Press into tray Line a small slice tray with baking paper. Press the biscuit mixture firmly into the base of the tray and smooth the surface.
  4. Add the chocolate topping Melt the white chocolate in the microwave in 30 second bursts, stirring each time until smooth. Pour the melted chocolate over the biscuit base and spread evenly.
  5. Decorate Place M&M Speckled Eggs over the top while the chocolate is still melted, gently pressing them in so they set into the chocolate.
  6. Chill Place the slice in the fridge for about 1–2 hours or until set.
  7. Serve Remove from the tray and slice into squares. Store in the fridge until ready to enjoy.

Optional: lightly crush some of the speckled eggs before sprinkling them on top.
  • I tried this and it was a win from my 1 1/2 year old!

  • I will be shopping today and I will be on the hunt for Scotch Finger finger biscuits on special. I will be making this slice for the next get together with work colleagues. Sweet treats are always a hit and making treats for morning and afternoon tea is loved by my colleagues.

  • I am a huge fan of Scotch Finger biscuits and any recipe that uses them is a hit with me. I really do love the taste of them and they make a great base for slice. I love the small amounts of ingredients needed for this sweet and colourful sweet treat recipe.

  • What a simple, yet impressive looking slice for Easter. It sounds similar to lemon slice – but much more chocolatey. I wonder if it would work with milk chocolate in place of the white chocolate (as I can’t eat it)., but the rest of the family would enjoy the white chocolate.

  • A great and simple treat idea to get the kids involved. It is colourful and looks fun to make with the kids. I would probably replace the speckled M&M’s for mini speckled easter eggs but other than that, this recipe looks a treat. I am going to add this to our baking list. By the end of the Easter weekend, I will have to go on a diet after trying all these lovely Easter recipes.

  • I love that this is only a few ingredients, especially when everything is so expensive! I love the idea of an Easter slice, I had not thought to do one before. I am not too sure on the colour in this picture, it is a little bright, but that’s an easy fix!

  • The idea is nice and quick with just melting and cooling and no baking. It is not my thing though with ingredients I never ever have at home. But I can imagine this can be nice for those who have a sweet tooth ad like colour full food. Happy Easter to you all !

  • This Speckled Easter Egg Slice looks really tasty. I would like to make it because it feels like a great Easter option that’s not too complicated. We love Scotch Finger biscuits, so using them as the base makes is even better. It’s the kind of treat that’s easy to serve up and would be perfect for Easter.
