Easy homemade ice cream – no churn/machines


Ingredients (serves 12 | makes 1 L Ice Cream)

  • 400ml Thickened Cream
  • 1 Can Condensed Milk
  • 1-2 teaspoons Almond Essence
  • 100g Chopped Natural Almonds
  • 2 Almond Rounds Biscuits or any almond flavour cookies/cakes for texture
  • 30g Chopped Almonds to decorate

Method

  1. Whip 400ml thickened cream by hand mixer or stand mixer until peaks form and creamy, not too stiff
  2. In a medium bowl add condensed milk, almond essence, chopped natural almonds, almond rounds biscuits & combine
  3. When the thickened cream is whipped, pour half the mixture of whipped cream & condensed milk into a freezable container (I use my free container from the recent Woolworths promotion), gently fold mixture, then add the rest and gently fold. Add a handful of chopped almonds on top for decoration
  4. Add glad wrap ontop of ice cream so it doesn't crystalize and add container lid back on and pop it into the freezer for min. 6hrs, ideally overnight. Voila! No ice cream maker in sight ;)

  • I would be interested to see how this turns out without an ice cream maker. I know that I have made something similar in the past that was a vanilla based cookies and cream and without an ice cream maker it froze rock solid. I have found I can use the same recipe in my ice cream maker and get perfect results.
