This Apricot slice is great for lunchboxes, work or morning tea.
Ingredients (serves 28)
- 2 Eggs
- 1 Cup self raising flour
- 1 Cup canola oil
- 1 Tbls cinnamon
- Coconut and Jam for decoration
Method
- In a food processor, mix the apricot and eggs, add canola oil, then the flour and cinnamon
- Put the mixture in a greased pan for 30 minutes in the oven at 160 degrees
- When a knife comes out clean, spread jam and coconut on top
