This Apricot slice is great for lunchboxes, work or morning tea.


Ingredients (serves 28)

  • 2 Eggs
  • 1 Cup self raising flour
  • 1 Cup canola oil
  • 1 Tbls cinnamon
  • Coconut and Jam for decoration

Method

  1. In a food processor, mix the apricot and eggs, add canola oil, then the flour and cinnamon
  2. Put the mixture in a greased pan for 30 minutes in the oven at 160 degrees
  3. When a knife comes out clean, spread jam and coconut on top

Notes

This recipe is my mum one . I loved it

  • Suppose this is exactly like a raspberry slice but using just apricot jam.

  • Glad I went through the comments to find that 500g of dried apricots were added. I’ll have to experiment with this slice so I can use the excess apricots from my tree in it instead. But thanks so much for sharing – think even a bad cook like me could do this one.
