Easy stir fry noodles for lunch.


Ingredients (serves 3)

  • 150 gr Vermicelli noodles
  • 1/2 bunch Choy sum, chopped
  • 100 gr Snow peas
  • 150 gr Prawns
  • 1 carrot, sliced
  • 2 Eggs
  • 1 big Onion
  • 2 tbs vegetable oil
  • 2 tbs Soy sauce
  • 2 tbs Fish sauce
  • 2 tbs Oyster sauce

Method

  1. Heat oil in a frypan over high heat and add onion, stir fry for 30 secs, add eggs and stir fry for 1 min. Add choy sum, carrot, snow peas and prawns, toss until wilted.
  2. Add in soy sauce, fish sauce, and oyster sauce stir well. Add noodles toss for 3-4 mins until heated through. Sprinkle with coriander and fried onion to serve.

  • This looks nice, can’t eat prawns though. Wonder what would be a good substitute?
