No mayo, no butter, no problem. A delicious panini in 5 minutes.


Ingredients (serves 2)

  • 2 Wholegrain rolls
  • 1 ripe avocado, sliced
  • 4 preserved ginger roughly chopped
  • 50g blue cheese roughly crumbled

Method

  1. Switch on panini machine (or a sandwich press). Cut rolls in halves.
  2. Assemble panini by adding avocado slices to the bottom half of rolls, layer with ginger and cheese. Put top of rolls in place.
  3. Heat panini in the machine until it's pressed down and heated through. Cut each roll in halves and serve immediately.

Notes

This recipe is presented to lovers of blue cheese. A little indulgent snack that's ready in very short time.

  • Mmmm, I LOVE avocado with blue cheese. I’m not such fan of bread. I regularly place an egg in the place of the avocado seed, top it with blue cheese and put it in the oven. With some homemade dukkah sprinkled on top, it makes a wonderful meal.

  • Ooh, I love the look of this but can’t do the ginger or blue cheese. I’d happily find replacements though. Avocado is my go-to every day.

  • My kids love avocado so i will try this out. I never thought about adding ginger to avocado but i reckon that is a great idea. I bet it tastes amazing! Thanks Missey

  • I’m not a fan of blue cheese so might give that a miss. Probably add ordinary cheddar or maybe some gouda. The ginger is an interesting addition

    Where do you get your preserved ginger?


    • You can get preserved ginger from good food grocer, or on the supermarket shelf.
      I get mine from the nuts & dried fruits wholesalers just off Sydney Road, Melbourne, Victoria where their stock go out their door everyday, I know their produce is fresh and reliable.
