A quick and super easy salad that is so refreshing to eat with meat or hot chips.
Ingredients (serves 4)
- 3 Large avocados
- 1/2 Small iceberg lettuce
- 1/2 Continental cucumber
- 4 Large pickled onions
- 2tbsp Whole egg mayonnaise
- 2tspn Brown vinegar
- Sprinkle Black pepper
Method
- Cut up all ingredients into cubes/slices and place all into a large salad bowl. I find if I cut the cucumber in half length ways and then cut into slices, they are easier to combine and eat.
- Mix in the vinegar and then the whole egg mayonnaise, mix until coated evenly. Sprinkle on the black pepper.
- Serve with grilled meat. If you are feeling daring, this recipe is also divine with hot chips and breadcrumbed chicken!
