A yummy, different take on the usual parmigana. I love mushrooms and try to eat them with every meal, this recipe allows the children to get the added vitamins and goodness from the mushroom and spinach without them complaining.


Ingredients (serves 4)

  • 4 Chicken Schnitzels
  • 8 rashers Bacon
  • 2 Tbsp Tomato Paste
  • 1 cup Mushrooms sliced
  • 1 cup Spinach
  • 1 cup Mozzarella Cheese

Method

  1. Preheat oven to 180 degrees. Place schnitzels on a lined baking tray and bake in the oven for 25 mins.
  2. Meanwhile cook your bacon and set aside. Cook the diced mushrooms and spinach together and set aside with the bacon.
  3. Once chicken is cooked, remove from the oven. Top the chicken with bacon, mushrooms and spinach then cover with the tomato paste. Top with the cheese and grill in the oven for 5-10 mins. Serve with veggies.

Notes

You could top schnitzels with anything you like and it opens up the options for different flavour combinations.

  • Chicken parmigana is one thing I sorely miss now that I’m a vegetarian, and this is something I would’ve loved to have tried. But, I can still make it for my kids! Looks amazing, thanks for sharing!
