Make these nearly everytime I bbq they are so juicy
Ingredients (serves 4)
- 8 lamb loin chops
- 1/3 cup balsamic vinegar
- 1/4 cup olive oil
- 1 tbs finely chopped fresh mint
- 2 medium red onions, peeled, thickly sliced
Method
- Place chops in a large shallow glass or ceramic dish. Combine balsamic vinegar, 2 tbs of the olive oil and mint in a screw-top jar and shake well. Pour marinade over lamb, turning chops to coat. Stand for 10 minutes
- Preheat barbecue grill or a chargrill on medium. Brush onions with remaining 1 tbs olive oil and cook on preheated grill for 6-8 minutes or until slightly crisp and golden, turning once. Remove and set aside to cool. Cook chops on preheated grill for 4-5 minutes on each side or until cooked to your liking, brushing often with marinade during cooking.
