Delicious healthy dinner! Soup packed with vegies, add more or less


Ingredients (serves 6)

  • 4 or 5 Stock cubes (beef or chicken)
  • 1 Chopped onion
  • 2 Chipped garlic cloves
  • 1 Chopped brocolli
  • 1/4 Chopped cauliflower
  • 3 CHopped carrots
  • 2 chopped poatoes
  • 500g Beef chopped

Method

  1. Fill a large pot half way with water (add more later if needed) heat on high Preheat a frying pan on medium high
  2. Place stock and vegies in water
  3. Sear chopped beef for a few minutes then add to pot of vegies
  4. Bring to the boil then turn down to a simmer until potatoes are soft

Notes

Serve with bread

  • I would use low salt beef or chicken stock rather than stock cubes which are laden with sodium [salt] – but thanks for sharing this quick and easy soup recipe.
