An incredible healthy Bircher Muesli!


Ingredients (serves 1)

  • 1/4 cup Rolled oats
  • 2 teaspoon each Pepitas and sunflower seeds
  • 1 teaspoon each Flaxmeal and chia seeds
  • 1 teaspoon Psyllium husk
  • 1 tespoon Almond flakes
  • 1/2 cup Malt-free soymilk
  • 1 tablespoon Full fat Greek yoghurt

Method

  1. Combine all dry ingredients in a bowl and pour over soymilk. Stir in yoghurt last.
  2. Soak overnight.
  3. Serve with fresh fruits or just by itself!

Notes

This muesli takes only 5 minutes to put together the night before and you will have a gorgeous breakfast to wake up to!

  • Not being a fan of soy milk, I’d probably use skim milk, or almond milk, or even apple juice. Love being able to prepare it the night before and get up to ready to eat breakfast.

  • This would certainly assist your digestion! soluble and insoluble fibre, just make sure you keep up the water during the day!
