A healthy alternative to traditional sugar-laden jams!


Ingredients (serves 12)

  • 300g Frozen blueberries
  • 1 Tbsp Honey
  • 1/2 Lemon (juice only)
  • 1 tsp Vanilla extract
  • 1 1/2 Tbsp Chia seeds

Method

  1. In a small saucepan, combine blueberries, honey, lemon juice and vanilla. Cook over a low heat for 10 - 15 minutes (until it becomes slightly syrupy).
  2. Add chia seeds. Mix thoroughly and remove from heat. Rest for 10 minutes before pouring into a glass jar.
  3. Refrigerate (without the lid on) for 1 hour. Once completely cooled, replace lid and keep refrigerated for up to 10 days.

Notes

Replace the blueberries with mixed berries, raspberries or strawberries for a different flavour. This jam will firm up as it rests in the fridge. Great as a toast topper, on porridge, on scones, as a cake filling, or in kids sandwiches!!
