This broad bean dish is great for vegetarians!
Ingredients (serves 8)
- 2 cups Small broad beans
- Water
- 2 Tomatoes
- 1 Tbsp Cumin
- To drizzle Olive oil
- 1 Tbsp Salt
- 1 Tbsp Lemon
- 1 Onion
Method
- Soak beans overnight. Add enough water to cover then some more.
- Drain and rinse beans. Add enough water to cover then some more. Simmer for 6 hours, adding water when required.
- Drain remaining water. Dice tomatoes and onion and add, continue simmering for 5 minutes.
- Add remainder of ingredients, stir and serve.
Notes
I love eating this with flat bread such as Lebanese breàd.
