Ingredients (makes 24 cookies)

  • 1/2 cup Olive oil
  • 1/2 cup Brown sugar (palm sugar)
  • 1 egg
  • 1/2 cup Flour
  • 1/2 teaspoon Vanilla essence
  • 2 cups Rolled oats
  • 1/4 teasppon each Salt, cinnamon, nutmeg

Method

  1. Preheat oven to 175 C.
  2. In a bowl, mix olive oil, brown sugar, eggs and vanilla until well blended. Combine the flour, salt, cinnamon and nutmeg; stir into the olive oil mixture. Mix in the oats last. Drop by rounded spoonfuls onto cookie sheet.
  3. Bake for 15 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
