Ingredients (makes 24 cookies)
- 1/2 cup Olive oil
- 1/2 cup Brown sugar (palm sugar)
- 1 egg
- 1/2 cup Flour
- 1/2 teaspoon Vanilla essence
- 2 cups Rolled oats
- 1/4 teasppon each Salt, cinnamon, nutmeg
Method
- Preheat oven to 175 C.
- In a bowl, mix olive oil, brown sugar, eggs and vanilla until well blended. Combine the flour, salt, cinnamon and nutmeg; stir into the olive oil mixture. Mix in the oats last. Drop by rounded spoonfuls onto cookie sheet.
- Bake for 15 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
