Bubble and squeak is a great way to get kids to eat veggies. You can add or omit which ever ones you like, potatoes are a must as they are the bulk of the mash. Sweet potato can be used in place of the potato. Serve as a main or as a side dish to a lamb chop or some chicken drumsticks.

Ingredients (serves 2 | makes 1 Big pot full)
- 4 medium Potatoes, peeled and chopped
- 2 large Carrots, peeled and chopped
- 2 large florets Broccoli
- 1 chunk Pumpkin, peeled and chopped
- 1/2 cup Frozen green beans
- 1/2 cup Frozen peas
- 1 large Onion, peeled and sliced
Method
- Place all prepared vegetables (except onion) in a pot with a little salted water. Bring to boil and simmer approximately 20 minutes or until tender
- Drain and mash, add salt, pepper and garlic. A little butter is nice too
- Heat oil and butter (or duck fat) in a frying pan. Place mashed veggies in and cook until golden brown. Flip over and cook on other side until golden brown. Serve
