Ingredients (makes 6 muffin bites)

  • 2 eggs
  • 45gm cauliflower
  • 30gm tasty cheese
  • oil

Method

  1. Preheat oven to 200 deg.
  2. Cook cauliflower in boiling water for 4 minutes.
  3. Grate the cheese into a bowl and crack in the eggs.
  4. Grease a mini muffin tin
  5. Drain cauliflower and cool with cold water. Then cut cauliflower up into small pieces and mix into the egg and cheese.
  6. Put into mini muffin tin and bake for 15 minutes or until puffed up, golden and cooked through.

Notes

You can also use leftover cooked cauliflower.

  • We make something like these often and my kids LOVE it. I do the same with broccolli, making broccolli muffin bites :) with spinach, making spinach muffin bites :) and mushroom, making mushroom muffin bites :)
