A sneaky potato pie for kids that don’t eat veggies, nice and simple


Ingredients (serves 4 | makes 1 Pie or 1 1/2 depending on pan size)

  • 3 Medium potatoes peeled and cubed
  • 500g Beef mince
  • 1/4 cup Milk
  • 3 tbsp Butter or margarine
  • 1 tsp Crushed garlic
  • 400g Tin crushed tomatoes
  • 1 Medium onion
  • 1 Beef stock cube
  • 2 tbsp Beef gravy
  • 1 cup Mixed vegetables
  • 1 tbsp Soy sauce
  • 1 sheet Puff or shortcrust pastry

Method

  1. Boil cubes potatoes until soft enough to be mashed. Remove from heat and set aside
  2. Cut onion however you would like it, add garlic, onion and mince to fry pan on medium heat and brown mince. Add tin tomato, beef stock cube, soy sauce and simmer for 20 minutes, remove from heat and set aside.
  3. Boil vegetables until soft, drain and then blend down to a paste. Then add to the mince mixture (this way the kids that don't eat veggies have no idea)
  4. Mash potatoes then add milk and butter until smooth. Add half the cheese to the mash potatoes and mix well
  5. Using a pie dish line it with the sheet of pastry, pour in the mince mixture until 3/4 full, spread the mash potato mix over the top then sprinkle remaining cheese on top. Place in the oven until top is browned and pastry is cooked. Make sure to let it stand after cutting so no burned tongues

Notes

This was something I threw together after my kids refused to eat a shepherds pie because of the veggies, now my family get me to make these in bulk and they freeze them for a quick and easy dinner solution for their families.

  • Never thought of blending the veggies – I’ve always just grated them in and suffered the wrath of the kids. This is genius!!
