The warmer weather is here, and it’s the perfect time to make a salad meal! Lee and her family love a chicken Caesar salad, and for them, it must have chicken, bacon and a good quality Caesar dressing. Everything else is negotiable.

Ingredients

  • 1 cos lettuce
  • 5 boiled eggs
  • 2 large chicken breast schnitzels
  • 500g parmesan cheese
  • 200g bacon
  • handful cherry tomatoes
  • 1 Lebanese cucumber
  • 2 pieces sourdough
  • Paul Newman's Own Creamy Caesar Dressing

Method

  1. Cut bacon into strips and cook in a dry fry pan until crispy (to your liking), remove from pan
  2. Cut sourdough into cubes and add to pan with bacon fat. Cook until golden and toasted. Remove from pan.
  3. Wipe pan and add cooking oil 2cm deep. Shallow fry chicken schnitzels until golden and cooked through, place on paper towel after cooking. Once cooled slice into strips.
  4. Cut tomatoes in half.
  5. Slice cucumber.
  6. Cut eggs into halves or quarters.
  7. Wash lettuce and roughly chop.
  8. Assemble salad in serving bowls or large platter by placing lettuce on the base, and topping with tomatoes, cucumber, bacon strips, parmesan, croutons. Drizzle with Paul Newmans Own Creamy Caesar Dressing and finish with sliced schnitzel, eggs and any remaining cheese.

  • Mmm. This looks amazing. I’m working on being fitter and healthier this year. A good hearty salad filled with protein is just what I need to kickstart my fitness and health journey. Salads can be very boring but this doesn’t look boring at all. Yum I will certainly be trying this recipe

  • Never thought of adding chicken to Caesar salad before reading this but will try now with this recipe. Looks simple enough to put together and delicious too. Even the kids can help to make it as they love to eat salads of all kinds and enjoy helping in the kitchen.

  • I made this dish on Boxing Day for a few friends that came over for lunch. It was a perfect dish to serve with a nice crisp glass of wine. This dish is a meal on its own but is also great when enjoyed with other foods.it is something I will be making a lot of this summer to enjoy for my lunch at work as it’s so easy to make and you can practically prepare. OST of it in advance and whip it together closer to the time you want to eat it

  • A slightly different and most probably a very much healthier version of Caesar salad by replacing the raw egg with cooked and chopped eggs and the addition of cooked chicken or cooked roast pork from the supermarket or even fresh prawns – all of these would be a winner and a fast way of making a cool dinner and no heating the house up with cooking through summer.

  • What a great recipe and I love a good Caesar salad any time of the year. I’ve never thought to use Chicken Schnitzel in one before now and that sounds really yummy. I also like that there are no anchovies because I can’t stand them. Love Paul Newman dressing as well.

  • Such a great recipe! Chicken caesar salad is a staple in my household, it’s fresh but filling and delicious. It travels well too for lunches and is preteen packed. I am a huge Parmesan fan so like to include some in the chickens crumb too! Makes it extra cheesy and delicious.

  • Just love this recipe, so fresh, crunchy and easy to prepare. The whole family loves it and its so great to take as a plate to any bbq or family gathering. I have this on my list for the Christmas table. The Paul Newman Ranch dressing is the best I have tried.

  • This is completely different to how I normally have a chicken caesar salad, but I love it! I would do it without the bacon as you have enough protein with the chicken and egg. I LOVE that it includes egg and the chicken component is schnitzels, which give extra texture. I’ve never seen it done with tomatoes and cucumber before.

  • I absolutely love chicken Caesar salad! I was actually just thinking yesterday that now the weather is warming up I should make one. This has to be a sign! I normally wouldn’t add tomato and cucumber is my Caesar salad but I can imagine it being a delicious and fresh addition.

  • Chicken caesar salad is one of mine and my families absolute favourite summer meals and adding crispy chicken snitzels make it even tastier. I also love Paul Newman’s dressings so I’m guessing this caesar dressing is delicious too. Can’t wait to give it a try. Thanks for sharing this recipe. 🙂


    • I do love to buy and use a variety of creamy and yummy dressings too. It really is so easy to give a recipe or meal a lift and flavour hit with a good dressing. Paul Newman’s dressings are easy to find in store and a good price too; as always I do like to buy when on special.

  • Love this presentation of Chicken Caesar Salad and have made a copy of the recipe for our Christmas Lunch this year. It looks so healthy, festive and colourful. I love the idea of the chicken breast schnitzels which will appeal to the little kids or I might even add Chicken Nuggets for them.

This type of meal is particularly good for making and then eating outdoors. It is the type of meal that is easy to eat and light on the stomach.

  • I absolutely love chicken ceasar salad and this has a great spin on it. It looks very well presented. A ceasar salad is perfect in summer as it is light and has amazing flavours. It is one of my favourite salad dishes to make for lunch or when i have friends over.
