A deliciously chocolately cupcake!


Ingredients (makes 12 cupcakes)

  • 200g Dark chocolate buttons/melts
  • 250ml Water
  • 150g Butter, softened
  • 165g Brown sugar
  • 3 Eggs
  • 185g Self - raising flour
  • 50g Plain flour
  • 2 tblsp Baking cocoa
  • 1/2 cup Dark Choc Bits
  • Buttercream Icing
  • 250g Butter, softened
  • 480g Icing sugar
  • 2 tblsp Baking cocoa

Method

  1. Preheat oven 180 line a 12 hole cupcake pan with cases. Combine dark melts and water in saucepan stir over low heat till chocolate melts remove from heat and set aside.
  2. Beat butter & sugar until pale and creamy. Add eggs one at a time mixing well after each one. Add sifted flours & cocoa until just combined, pour chocolate mixture stir to combine fold in choc bits.
  3. Spoon evenly. among the cupcake cases. Back for 30 -35 minutes or until cooked. Make Buttercream icing , Beat butter until pale gradually add icing sugar & cocoa mixing well until combined. Once cupcakes cooled. put generous amount of icing onto, dust with some cocoa and enjoy!
