A deliciously chocolately cupcake!
Ingredients (makes 12 cupcakes)
- 200g Dark chocolate buttons/melts
- 250ml Water
- 150g Butter, softened
- 165g Brown sugar
- 3 Eggs
- 185g Self - raising flour
- 50g Plain flour
- 2 tblsp Baking cocoa
- 1/2 cup Dark Choc Bits
- Buttercream Icing
- 250g Butter, softened
- 480g Icing sugar
- 2 tblsp Baking cocoa
Method
- Preheat oven 180 line a 12 hole cupcake pan with cases. Combine dark melts and water in saucepan stir over low heat till chocolate melts remove from heat and set aside.
- Beat butter & sugar until pale and creamy. Add eggs one at a time mixing well after each one. Add sifted flours & cocoa until just combined, pour chocolate mixture stir to combine fold in choc bits.
- Spoon evenly. among the cupcake cases. Back for 30 -35 minutes or until cooked. Make Buttercream icing , Beat butter until pale gradually add icing sugar & cocoa mixing well until combined. Once cupcakes cooled. put generous amount of icing onto, dust with some cocoa and enjoy!
