Ingredients (makes 1 Tray)

  • 1 cup Plain flour
  • 1/2 cup Sugar
  • 1 cup Coconut
  • 185 gram Butter, melted
  • 1/2 tsp Vanilla
  • Chocolate icing:
  • 1 cup Icing sugar
  • 2 tbls Cocoa
  • 30 grams Butter, melted
  • 1 1/2 tbls Hot water

Method

  1. Preheat oven to 180 degrees. Line a lamington tin with baking paper.
  2. Sift the dry ingredients into a bowl. Add the melted butter and vanilla, mixing well. Press mixture into the tin and bake for approximately 20 minutes.
  3. Cool in tin and ice with chocolate icing when cold.
  4. Chocolate icing: Sift icing and cocoa together in a bowl. Add melted butter and water, mixing until smooth.
