Ingredients (makes 1 Tray)
- 1 cup Plain flour
- 1/2 cup Sugar
- 1 cup Coconut
- 185 gram Butter, melted
- 1/2 tsp Vanilla
- Chocolate icing:
- 1 cup Icing sugar
- 2 tbls Cocoa
- 30 grams Butter, melted
- 1 1/2 tbls Hot water
Method
- Preheat oven to 180 degrees. Line a lamington tin with baking paper.
- Sift the dry ingredients into a bowl. Add the melted butter and vanilla, mixing well. Press mixture into the tin and bake for approximately 20 minutes.
- Cool in tin and ice with chocolate icing when cold.
- Chocolate icing: Sift icing and cocoa together in a bowl. Add melted butter and water, mixing until smooth.
