Ingredients (serves 4)

  • 1 medium sized fennel thinly sliced - this is best done with a mandolin if you have one
  • 1 orange - peeled and thinly sliced
  • 1 cup croutons
  • 1/4 Paul Newman’s Own Classic Vinaigrette

Method

  1. Mix all ingredients together on a plate and top with fennel fronds Tip! You can use store bought croutons or make your own by baking cubed sourdough bread in an 200g oven drizzled with some olive oil, salt and pepper. Bake until crusty.

  • This salad looks fresh and very colourful. Im not too sure on the fennel, but we would Love to try anything new at the moment. I have had fennel in the past, but not alot and I’m not overy sure how to cook with it. The oranges are a nice salad option.

  • This looks good and different but not for me. Fennel is not something that really appeals to me or, I think, many others. I would imagine serving this up and having it avoided.

  • I must say this one doesn’t really float my boat. There doesn’t really seem to be a lot to it. I don’t have a lot of experience with fennel, but it really looks as though the salad is predominantly orange. It doesn’t really make up much of a meal or a side dish…

  • This looks absolutely divine. It’s a bit, stormy night for me right now and I would love nothing more than a big plate of this salad. Blood oranges would be a nice addition, too.

  • Fennel and orange goes really well together although I am not a huge fan of it, I would still be interested in trying this dish. I would cut the orange into chunks rather than slices but that is just a personal preference. This dish looks very summery and a lovely idea for when guests are over.

  • Fruit in salad is lovely indeed ! I like the licorice-like flavor of Fennel. The fact it contains potassium, magnesium, and other nutrients with an antioxidant effect is of course a great bonus. Fennel is also soft on the tummy and supports digestion, relieves constipation, improves your sleep and prevents skin damage.

  • I love using fruit in salads. It just gives them a sweet summery flavour that everyone seems to love especially kids. I’ve never really eaten a lot of fennel so I’m definately keen to give this a try and see how it goes as it certainly looks and sounds super tasty.


    • I love fennel because it looks so delicate in salads and in other meals. I love orange because it brings a much needed pop of colour to a plate of food. Colourful and fresh salads are a definite must in our household. I do love meals that are visually appealing to the eye.

  • I really do love the look of Summer salads because they always look so fresh and inviting to eat. This orange and fennel Summer salad looks so fresh and would be so good and yummy when served with chicken or duck. Orange and fennel goes so well with chicken or duck.
