This almond bar recipe is very delicious, especially if you like peanut butter.


Ingredients (serves 8)

  • 2 cups oats
  • 1 cup dessicated coconut
  • 1/2 cup almonds
  • 1/2 cup sesame seeds
  • 1/2 cup raisin
  • 1.5 cups melted peanut butter
  • 1/2 cup honey
  • 1 egg
  • 1/4 cup flour

Method

  1. Preheat the oven to 180 degrees. Mix all the dry ingredients together in a bowl.
  2. Melt the peanut butter and honey and stir through the dry ingredients.
  3. Add 1 egg beaten (if mixture seems dry or egg too small add another).
  4. Press mixture into baking tin spread about 1 inch thick across base.
  5. Bake for 15 minutes, or until golden.
  6. Cut into slices.

  • I have so many jars of honey here that anything with honey is something im interested in at the moment.

  • If you don’t like oats you could use another grain such as buckwheat or quinoa if you want to make it gluten free. If not you could crush other cereal to replace the oats.

  • Sounds good, although I would substitute honey for coconut palm syrup as heating honey is not a healthy practice.

  • Tried these with cashew butter instead of peanut and the children loved them. Sorry not really a fan of peanut butter so do not stock it but will buy some to try, what type please should be used?

  • Looks and sounds great, but I would not put in the peanut butter because of all the current allergies to it. But it would still be great without it.
