Easy and quick – these coconut cakes will be a hit with the whole family! Can be easily made GF also.
Ingredients (makes 12 cupcakes)
- 1 cup desiccated coconut
- 1 cup coconut milk
- 1/2 cup caster sugar
- 1 cup self-raising flour
Method
- Preheat oven to 180 degrees.
- Line a 12 cup cupcake tin with paper cases.
- Place all ingredients in a bowl and mix well. Divide mixture evenly between the cases.
- Bake for 20 mins.
