Ingredients (serves 12)
- 2 large eggplant (cut into 2 cm cubes)
- 1/4 cup Coconut oil
Method
- In a big bowl, combine the eggplant and coconut oil evenly using your hands.
- Spread them on a large baking tray and bake for 20 minutes on 180C or until golden brown.
- Serve as sides.
