Simple and easy coconut rice to serve as a side dish, dessert or snack for the kids.
Ingredients (serves 6)
- 1 cup Jasmine rice
- 1 can (400ml) Light coconut milk or cream
Method
- Combine rice and coconut milk/cream in a medium saucepan.
- Bring to a simmer over a medium heat whilst stirring. Lower heat and continue to simmer gently until milk is absorbed and rice is tender. Or cover with lid and turn off heat to absorb the milk and rice is tender. May need to add extra water or milk if rice is not tender once milk absorbed (approx 20-30 minutes)
- Serve as a side dish to curries or stir fry or as a dessert. Delicious topped with berries or banana. Can add a little sugar if you like it sweeter.
