Very Simple delicious and healthy meal. It makes plenty of salad and could easily be eaten over two days.
I also like to add extra hummus to my taste once the couscous is served up.
Ingredients (serves 6)
- 200g couscous
- 1/4 cup Olive Oil
- 200ml Chicken Stock
- 1/2 Red onion diced
- 1 Lebanese cucumber diced
- 2 Tomatoes diced
- 1 Yellow Capsicum diced
- 2 tbs Lemon juice
- 1 tbs Hummus
- 2 tbs Chopped Parsley
Method
- Put Couscous into a large bowl then in a saucepan Bring stock and 1 tablespoon of olive oil to the boil and pour over the top of couscous . Cover and set aside for 10 minutes.
- After 10 minutes fluff couscous with a fork. When couscous has completely cooled stir in onion,parsley,cucumber,capsicum and tomato.
- In a separate bowl mix the remaining olive oil, lemon juice and hummus. Add to the couscous and stir well until to combined.
