A quick and delicious vegan recipe.
Ingredients (serves 4)
- 750g sweet potato
- 2 cups water
- 1 tablespoon oil
- 1 onion
- 1/2 teaspoon red curry paste
- 2 tablespoons lemongrass
- 1 cup coconut milk/cream
Method
- Boil sweet potato in water until tender, and mash in the pot.
- In a small saucepan, saute finely chopped onion in oil, along with red curry paste and finely chopped lemongrass.
- Add onion mixture to mashed sweet potato, pour in coconut milk and reheat but do not boil. Puree and serve with a garnish of coriander.
