I am happy as my hubby and my son love this durian pancakes hihi…..


Ingredients (makes 10 pancakes)

  • 400 ml Water
  • 200 gr Plain flour
  • 1 tsp Tapioca flour
  • 1 tsp Sugar
  • 1/4 tsp Salt
  • 2 drop Pandan paste, for colour ( optional)
  • 400 gr Durian Montong ( available at Coles )
  • 50 ml Milk
  • 1 tsp Sugar

Method

  1. Cook durian, milk and sugar in low heat until thicken. Leave to cool.
  2. Mix all ingredients ( water, flour, tapioca, sugar, salt and pandan) in a big bowl and use whisk to mix well. Sieve, then cover and stand for 30 minutes.
  3. Pour a scoop of the batter in the center of the non-stick pan (do not add oil) and move the pan around for the batter to coat the side. Once the colour changed and batter turn hard, crepe is ready and remove it immediately . Just fry for one side only.
  4. Spoon of durian mixture on the center of crepe and fold into a square long shape. Leave in cool in the fridge before serve.

  • These look interesting. Never tried using durian.
