Ingredients (serves 4)

  • 1kg Chicken Thighs
  • 1 Onion - Sliced
  • 1pkt French Onion Soup Mix
  • 800ml Can Apricot Puree
  • 1 Can Sliced Apricots

Method

  1. Saute Onion until transparent in colour.
  2. Cut up chicken into bite size piece and add to post. Stir until chicken totally sealed.
  3. Add French Onion Soup Mix and stir until chicken coated. Pour in Apricot puree and Apricot Halves. Simmer for 1hr Serve with Rice

  • I associate this recipe so strongly with the 1970s! Before my time, but apparently it was the height of sophistication back then and a very popular and “exotic” recipe. I have to admit it doesn’t sound that appealing to me, but can an entire generation be wrong? Maybe I should try it.

  • Apricot chicken is always easy to cook, no matter which version you try. I coat my chicken pieces in flour, place in casserole dish, sprinkle over packet of French onion soup. Stir in can of apricot nectar and bake at 180*C for 90 mins, stirring half way through. Add a tray of veg to bake in oven too. Tea sorted

  • I love Apricot Chicken, but my fussy family don’t! Thinking I may have to have a cooking day, make a nice batch and freeze up nice lunch sized portions.
