Top with chopped parsley for a nice effect
Ingredients (makes 12 cups)
- 12 Baby Cos Lettuce leaves (or 6 whole iceberg leaves)
- 4 Hard Boiled Eggs
- 1 Tablespoon Mayonnaise
- 1/4 Teaspoon Curry Powder
- 1 Tablespoon Chopped Dill (or chives)
Method
- Place eggs in a bowl and mash
- Add mayonnaise, dill and curry powder and combine
- Arrange the lettuce leaves on a serving platter and spoon in the egg mixture and serve.
