Top with chopped parsley for a nice effect


Ingredients (makes 12 cups)

  • 12 Baby Cos Lettuce leaves (or 6 whole iceberg leaves)
  • 4 Hard Boiled Eggs
  • 1 Tablespoon Mayonnaise
  • 1/4 Teaspoon Curry Powder
  • 1 Tablespoon Chopped Dill (or chives)

Method

  1. Place eggs in a bowl and mash
  2. Add mayonnaise, dill and curry powder and combine
  3. Arrange the lettuce leaves on a serving platter and spoon in the egg mixture and serve.

Perfect for luncheons, tea parties or high teas
