Ingredients (serves 12)

  • 6 eggs
  • 1/2 cup spring onion
  • 1/2 cup green capsicum
  • 1/2 cup red capsicum
  • 1/4 tsp salt
  • Oil, to grease the tin

Method

  1. Preheat oven to 180°C/160°C fan-forced and grease the muffin tray with oil.
  2. Beat the eggs and all ingredients in to it and mix them well.
  3. Add 1 tbsp of mixture for each muffin in tray and put in the oven for 15-20 minutes or until its fully cooked so a skewer comes out dry.
  4. Let cool in the tray or put on the drying rack and add in kids' lunchbox.

  • I don’t think my kids would eat these but I would.

  • Yummy!! We tweaked them a bit by adding cherry tomatoes, cheese and chorizo. So good! This is our new quick and easy breakfast muffin, for when friends and family come to stay.
