This raw key lime pie is a delicious recipe perfect for vegans and healthy mums.

Ingredients (serves 10)

  • BASE
  • 1 cup walnuts
  • 1/2 cup fresh dates
  • 1/2 cup cocoa
  • FILLING
  • 2 avocados
  • 3 limes, Juiced
  • 1 lime, zest
  • 1/4 cup Manuka honey
  • 1/4 cup organic coconut oil
  • TOPPING
  • frozen mixed berries

Method

  1. Blitz the base ingredients in a blender until crushed. Line a cake base tin with the base and pop in the freezer.
  2. Blend the filling until smooth and pop on top of base.
  3. Top with mixed berries and place in the freezer until set, take the pie out 30 minutes prior to serving to soften.

Notes

This is one of my show stoppers. Every time I make this my friends and family adore it!
