I think this might have been a Donna Hay recipe I copied into my recipe book, but you can add pretty much any fruit and it will work

Ingredients (serves 6)

  • 5 Peaches, chopped
  • 4 Figs chopped
  • 1/2 Cup Castor sugar
  • 2 Cups Water

Method

  1. Put fruit in a blender or food processor until smooth
  2. Dissolve sugar in water over low heat, add to the fruit and stir until just combined
  3. Pour into a shallow metal tin and freeze for an hour. Run a fork over the top and put back in freezer. Do this every hour or so until it looks like snow

Notes

I make this when I know there is hot weather coming

  • This is such a unique combination for a Granita! So summery and fresh. I actually have a dwarf fig tree in my garden and while I am not overly a fan of the fruit on their own I feel like they’d pair nicely with some summer peaches. Wondering if I could give this a go in my Ninja Creamii?

  • I always forget about figs. They are so delicious but I think because they aren’t available all year, I tend to forget about them.

  • I must admit that I’m not keen on figs, but maybe this would taste okay with the peaches!
