A tastey, relatively healthy and quick meal the whole family will love
Ingredients (serves 4)
- 2 cups Cooked and cooled rice
- 1 onion, peeled and finely chopped
- 1 carrot peeled and sliced diagonally
- 3 or 4 mushrooms, chopped small
- 2 eggs, whisked, fried and chopped up
- 1/3 cup corn kernels
- 1/3 cup peas
- 1/2 finely chopped red capsicum
- 1 Tblsp soy sauce
- 1 Tblsp fish oil
- 2 Tblsps kecap manis
- 2 rashers bacon, finely chopped
- 1 tsp sesame oil
Method
- Whisk together 2 eggs, add some garlic and ginger for added flavour. Heat frying pan, add a splash of sesame oil and 1 Tbsp canola oil. Add egg, spread round pan so it cooks flat. Remove and chop up
- Heat a little more oil in frying pan, add veggies and fry til softened.
- Add rice to pan, fry 5 minutes. Add sauces and stir to combine. Serve
Notes
This a family favourite. Easy and delicious. We have sweet and sour chicken with it usually
