A quick and easy sweet treat for lunch boxes (just be sure to take out the almonds for nut-free schools)


Ingredients (makes 10 balls)

  • 85 g dried apricots
  • 55 g blanched almonds
  • 55 g raisins
  • 140 g white chocolate
  • 55 g dessicated coconut

Method

  1. Place apricots, almonds and raisins in a food processor and process.
  2. Melt the chocolate in a bowl and then stir in the apricots, almonds and raisin mixture and the coconut.
  3. Roll the mixture into balls. Place in patty cases. Leave them to set for 1 to 2 hours.

Notes

Use different dried fruit if desired. Take out nuts for nut free schools. I play with this recipe and use whatever is available in the pantry.
