A quick and easy sweet treat for lunch boxes (just be sure to take out the almonds for nut-free schools)
Ingredients (makes 10 balls)
- 85 g dried apricots
- 55 g blanched almonds
- 55 g raisins
- 140 g white chocolate
- 55 g dessicated coconut
Method
- Place apricots, almonds and raisins in a food processor and process.
- Melt the chocolate in a bowl and then stir in the apricots, almonds and raisin mixture and the coconut.
- Roll the mixture into balls. Place in patty cases. Leave them to set for 1 to 2 hours.
Notes
Use different dried fruit if desired. Take out nuts for nut free schools. I play with this recipe and use whatever is available in the pantry.
