A quick and easy fruit, muesli and yoghurt treat for school and work.


Ingredients (serves 3)

  • 1 cup rockmelon, cubed
  • 3 kiwi fruit; cut into wedges
  • 400g low fat vanilla yoghurt
  • 4 tablespoons toasted muesli

Method

  1. Layer fruit, yoghurt and muesli in tub.

Notes

I vary the fruit according to season; banana and strawberries; mango and pineapple; apricots and grapes; any other fruit combinations that you prefer. The yoghurt and muesli can be kept in separate tubs and placed on the fruit before eating. This is a much cheaper alternative than store bought options.

  • This would indeed be a nice thing to find in your lunchbox – but it’s sweltering right now, so I can’t help thinking you’d really need an ice block thingy in with it to make sure the yoghurt didn’t poison you. But it’s both healthy and sweet, so should be popular.

  • This looks like a delicious healthy dessert option and you could use whatever fruit you liked or go with whatever was in season. Personally id love mango and strawberries or maybe blueberries! Yum. Would actually make a really nice breakfast as well. Thanks so much for sharing this recipe 🙂
