I hope you enjoy this recipe! Really delicious. Very easy to whip up with simple ingredients you can find around your kitchen.


Ingredients (serves 8 | makes 1 Cake)

  • 1/2 cup Plain Greek yogurt
  • 1 cup Sugar
  • 3 Eggs
  • 1 1/2 cups Plain flour
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1 medium Zest of a lemon
  • 1/2 small Zest of a orange
  • 1/2 cup Sunflower oil
  • For the glaze
  • 1/4 cup Lemon juice
  • 3/4 cup Icing sugar

Method

  1. Preheat oven to 175 degrees Celsius Spray tin or line with bake paper
  2. In a large bowl combined yogurt sugar and eggs stir until well blended
  3. Add flour, baking powder, salt and zest Lightly mix until combined
  4. Then add oil and stir well Keep stirring until smooth
  5. Poor batter into pan
  6. Bake for 30-40 mins Or until knife comes out clean
  7. Combine lemon juice and ice if sugar in a bowl stir until smooth Drizzle over cake until soaked and decorate with left over lemon and orange

    • I always use yoghurt in cakes particularly when it is time to clean out the fridge and use soon to expire yoghurt.
