Simple meal for breakfast. Serve with bread.


Ingredients (serves 2)

  • 2 Eggs
  • 1 Tomato, diced
  • 1 tbs Fresh milk
  • 1 tbs Butter
  • 1 tbs Parmesan, grated
  • 1 stalk Coriander, chopped
  • 2 thin Sliced Ham
  • Salt and pepper for taste

Method

  1. Lightly beat eggs, tomato, milk, parmesan, coriander, salt and pepper until mix well.
  2. Heat up butter in frying pan, pour eggs mixture and cook with medium heat. Add ham in the middle and then turn over other side, cook for about 30 seconds.

  • This is such a simple yet delicious recipe.

  • As I’m not a fan of coriander, I’d probably substitute some onions and spring onions, and I’d put a little drained asparagus in the omelette too. Would be a very tasty and nutritious breakfast dish.
